Dinner: Beans and Rice with Onion

Ingredients:
1 cup rice (preferably quick-cooking or instant rice)
1 can beans (e.g., black beans or kidney beans), drained and rinsed
1 medium onion, finely chopped
1 tablespoon butter
Salt to taste
2 cups water (for the rice)
Instructions:
Start by heating the butter in a pot over your portable stove. Add the chopped onions and a pinch of salt, sautéing until the onions are translucent and slightly golden.
Add the rice to the pot, stirring to coat the grains with butter and mixed well with the onion.
Pour in the water and bring to a boil. Once boiling, reduce the heat and cover the pot. Let the rice simmer according to the package instructions, usually about 10-15 minutes for quick-cooking rice.
When the rice is almost done, stir in the canned beans. Cover again and let it simmer for an additional 5 minutes, or until both the rice and beans are heated through.
Adjust the seasoning with salt to your taste before serving.
