Dinner: Couscous with Raisins and Pita Bread
Couscous is an excellent choice for hiking due to its lightweight nature and quick cooking time. It requires only boiling water to prepare, making it ideal for camping stoves. Raisins add a natural sweetness and are a good source of energy and fiber. When combined with pita bread, this meal provides a balanced mix of carbohydrates and nutrients, essential for recovery after a long day of hiking.
Ingredients:
1 cup instant couscous
1/4 cup raisins
1 teaspoon salt (or to taste)
1/2 teaspoon ground cinnamon (optional for flavor)
2 cups boiling water
Olive oil (optional, for dressing)
2-4 pieces of pita bread (depending on serving size)
Instructions:
In a heatproof container, mix the couscous, raisins, salt, and cinnamon.
Pour 2 cups of boiling water over the couscous mixture, stir briefly, then cover the container. Let it sit for about 5 minutes or until the water is fully absorbed.
Fluff the couscous with a fork to separate the grains. Drizzle with a little olive oil if desired for added flavor and moisture.
Heat the pita bread on a pan or directly over the fire for a few seconds on each side until warm and slightly toasted.
Serve the couscous with warm pita bread on the side.
